The TV star and his girlfriend welcomed their first child, whom they named Chester, into the world in January, but complications during labour meant that Emma had to change her birthing plan at short notice.
'We're not going too much into it, as it wasn't what we wanted. I ended up having to have a C-section and I had Chester on the Monday lunchtime,' revealed Emma.
Gaz, 29, went on to confess that he was extremely emotional as the situation unfolded at the hospital.
'I was fighting back tears as it was happening and I was thinking to myself, don't cry! I was turning away as it was happening. It's the weirdest thing. It's just mad that there's a little human. Honestly, it still feels weird,' he told OK! Magazine.
He then admitted that he still can't quite believe he's a father.
Gaz continued: 'I don't understand how you create this. I was hysterical. I'm responsible. I still ring my mam if I'm in a panic. I rely on that person even now, so it's mad that I'm now that for him. It will never sink in, I don't think.'
Despite everything they went through, Gaz and his 25-year-old partner seem to be adapting well to their new roles as parents.
The duo regularly give fans an insight to their life with a little one by sharing updates on social media.
Just a few days ago, the Geordie Shore boy treated his followers to an adorable video.
'Play time 😂😘 well wriggle time...' he captioned the short clip which sees him lying on the floor alongside his newborn.
Snug in a white all-in-one decorated with a grey print, Chester looks adorable as he stretches by his proud dad.
'Amazing! You've gone from party guy to awesome daddy guy,' quipped one of Gaz's many admirers on the social networking site.
