Vanilla apple croissants
These versatile and delicious apple and vanilla croissants can be eaten for breakfast, tea or dessert. Serve with crème fraiche, vanilla ice cream or custard or sprinkled with flaked almonds - the choice is yours!

50g (2oz) butter
25g (1oz) golden caster sugar
1/2 vanilla pod, split lengthways
4 Braeburn apples, cored and sliced
4 all-butter croissants, split in half
142ml (5fl oz) crème fraîche
1. Put the butter in a large non-stick frying pan and sprinkle with sugar. Add the vanilla pod and heat until the butter melts.
2. Top with the apple slices and cook over a medium heat for 10 mins until caramelised and golden.
3. Warm the croissants - you can do this in the oven or under the grill. Place a croissant on each plate and fill with the apple mixture and a dollop of crème fraîche.
