Broccoli and cauliflower gratin
A healthy and tasty way to aim for your five daily servings of vegetables. The broccoli and cauliflower really complement the smooth white sauce.
Takes: Approx 30 mins
225g (8oz) broccoli
200g (7oz) cauliflower
25g (1oz) butter
25g (1oz) flour
300ml (1/2 pint) milk
75g (3oz) breadcrumbs
50g (2oz) Cheddar, grated
Salt and pepper
Pinch of grated nutmeg
1. Parboil the broccoli and cauliflower.
2. To make the white sauce, melt the butter, stir in the flour and add the milk. Season with salt, pepper and nutmeg.
3. Mix the vegetables with the sauce, top with the breadcrumbs and cheese. Bake at Gas 4/180°C/350°F for 20 mins.
