Split pea and ham soup
This heartwarming soup is a great way to use up any leftover ham. A meal in itself, this soup is gorgeous when served with a swirl of cream or some melting mozzarella.
25g (1oz) butter
225g (8oz) leeks, sliced
2 garlic cloves, crushed
75g (3oz) dried split yellow peas
1 litre (1 3/4 pint) hot vegetable stock
2tbsp fresh thyme leaves
225g (8oz) cooked ham, diced
1. Heat the butter in a pan. Add the leeks and garlic, and fry for 5 mins.
2. Stir in the split peas and hot vegetable stock. Bring to the boil and simmer for 40 to 50 mins.
3. Add the thyme and ham. Season, simmer for 5 mins and serve.
