Pesto roasted vegetables
Use any combination of vegetables for this quick, roasted vegetable side dish. The pesto adds a wonderful basil flavour. Serve with roast chicken to add an Italian flavour to Sunday lunch.

2 courgettes, thickly sliced
1 red and 1 yellow pepper, thickly sliced
1 leek, thickly sliced
1 aubergine, chopped
4tbsp basil or rocket pesto
2tbsp olive oil
1. Toss the courgettes, pepper, leek and aubergine in the pesto with the olive oil and season well.
2. Roast in a preheated oven at Gas 6/200°C/400°F oven to for 20-30 mins.
