170g (6oz) macaroni
1dsp butter or low-fat spread
1dsp plain flour
1/2tsp mustard powder
1/2 pint semi-skimmed milk
170g (6oz) cheddar cheese, grated
Salt and pepper, to taste

1. Cook the macaroni in lightly salted boiling water, according to packet instructions.
2. Melt the butter in a pan. Add the flour and mustard powder, stirring all the time to make a paste. Don't let it burn.
3. Slowly add the milk, whisking with a fork to get rid of any lumps. Add a pinch of salt and pepper to taste.
4. Keep on a medium heat. When the sauce thickens, add the cheese, keeping a little back for the topping, and whisk until smooth.
5. Drain the pasta and add to the sauce. Pour into an ovenproof dish and sprinkle with the rest of the grated cheese.
6. Bake at Gas 6/200°C/400°F for 20 mins.
