Jane Doherty's pasta with salmon and sour cream
Pasta shapes, about 50g (2oz) per person
1 clove garlic, crushed
10 mushrooms, sliced
2 to 3 slices smoked salmon, chopped
1tbsp sour cream
1tbsp milk
Handful grated cheese
1tsp cornflour
Fresh or dried dill
1. Boil the pasta according to packet instructions.
2. Meanwhile, fry the garlic and mushrooms. Once cooked, take off the heat and add the salmon.
3. Add the sour cream and stir for 1 min, then add the milk. Bring to the boil and add the grated cheese. Leave on the heat just long enough for the cheese to melt.
4. Add the cornflour and continue to stir for a couple of minutes to thicken. If it's too thick, dilute with milk.
5. Pour the sauce over the drained pasta, sprinkle with dill and serve.

I gave this a go today, though I didn't have any mushrooms. It was really nice and simple to make. I'll definitely make it again when I've got left-over smoked salmon.
