Cupcakes
These pretty cup cakes are great for kids' parties - just arrange your child's favourite sweets and edible decorations on top.
Makes: 14-16
125g/41/2oz plain flour
1tsp baking powder
125g/41/2oz unsalted butter
125g/41/2oz caster sugar
2 eggs, beaten
85g/3oz strawberry jam
For the icing:
350g/12oz icing sugar, sifted
Fresh lemon juice
Edible food colouring
Edible cake decorations (such as flowers, ladybirds or silver balls)
1. Put 14-16 paper cases into bun tins. Sift together the flour and baking powder and set aside. Preheat the oven to Gas 4/180°C/350°F.
2. Cream the butter and sugar until pale and light in a mixing bowl. Gradually beat in the eggs, followed by the jam. Slowly beat in the flour mixture until smooth.
3. Spoon into the paper cases and bake for about 20 mins or until golden. Turn out
on to a wire rack and leave to cool.
4. Tip the icing sugar into a bowl and add enough fresh lemon juice to make a thick icing. Add colouring if you like and spoon the icing over the little cakes. Arrange edible decorations on top.
Top tip: Supermarkets now sell excellent cake decorations. Look for them near the marzipan and ready-to-roll fondant icing.

yeah, i find that the lemon juice works just as well as lemon flavorings. i ussually get the flavorings but lemon juice is cheaper and tastes nicer.
