Chilli, lime & prawn pasta salad
Liven up your pasta salads by adding flavours with a kick like chilli, lime and prawns - tasty!

350g (12oz) penne pasta
Zest and juice of 2 limes
2 red chillis, de-seeded and chopped
6tbsps olive oil
Pinch caster sugar
200g (7oz) cooked, peeled prawns
4 tomatoes, chopped
2 small red onions, chopped
6tbsps chopped fresh coriander
300g bag sweet and crunchy salad leaves
1. Cook the pasta according to the pack instructions. Drain, rinse in cold water until just cold, then drain again.
2. Put the lime zest and juice, chillis, oil and sugar in a jug and whisk. Season well, then pour into a bowl with the prawns, tomatoes, onion and coriander.
3. Add the prepared pasta and the salad leaves, toss well and serve.
