Purple sprouting broccoli in lemon pasta
Ever been told that broccoli's good for you? Well it's true! It contains lots of cancer-fighting and anti-aging agents, plus it may even undo organ damage caused by diabetes. So get more into your diet!
This dish is full of spring flavours. If you can't get purple sprouting broccoli, just use traditional broccoli.
150g (5oz) penne pasta
200g (7oz) purple sprouting broccoli cut into 5cm pieces
1tbsp olive oil
2 cloves garlic, chopped
Zest and juice of 1/2 lemon
2tbsp white wine
100ml (3.38 floz) double cream
Salt and black pepper
1. Bring a large pan of seasoned water to a rolling boil. Add the pasta and boil for 10 mins or according to pack instructions. Drain and return to the pan.
2. Bring another small pan of water to the boil, add the broccoli and simmer for 2 mins. Drain and add to the pasta.
3. Heat the olive oil in a frying pan. Add the garlic and lemon zest and cook for 1 min until soft, but not coloured. Add the white wine and lemon juice and reduce by half. Stir in the cream and seasoning and bring to the boil.
4. Add the cream mixture to the broccoli and pasta and toss until well mixed. Serve with a generous sprinkling of black pepper.
