Pasta with kale and chilli
Takes:10 mins preparation + 10 mins cooking
Serves: 4
300g (11oz) pasta shapes
200g (7oz) kale, shredded
1 tbsp olive oil
175g (6oz) onions, chopped
250g (9oz) smoked back bacon, chopped
1-2 tsp mild chilli powder
400g can chopped tomatoes with herbs
1. In separate pans, boil the pasta and kale for 10 minutes. Drain.
2. Meanwhile, heat the oil in a frying pan and fry the onion, bacon and chilli powder for 5 mins. Add the tomatoes and cook for 1-2 mins.
3. Stir in the kale and pasta and season to taste.
Top tip: Great served with freshly grated Parmesan and a sprinkling of chopped parsley.
