Spaghetti with tomato salsa

75g/3oz dried spaghetti
1 shallot, finely chopped
8 cherry tomatoes, chopped
2 tbsp olive oil
Fresh chives, to garnish
1.Cook the spaghetti according to the packet instructions in a large panful of boiling salted water.
2.Drain the spaghetti and reserve about 1tbsp of the cooking water.
3.Meanwhile, sauté the finely chopped shallot in a little butter until softened. Add the cherry tomatoes and the olive oil and cook briefly.
4.Mix together the tomato salsa and the reserved pasta water. Season with salt and pepper and add salsa to the spaghetti, mixing thoroughly.
5.Serve hot, garnished with a sprinkling of fresh chives.
Tip: For a creamier sauce, stir through 1tbsp of low- fat crème fraîche or extra- light cream cheese after you've mixed the tomatoes with the pasta water.
