3 x 220g pkts microwave pasta
500g/1lb 2oz cooked, skinless, boneless chicken breasts, chopped
225g bag spinach leaves, washed
8 cherry tomatoes, halved
2tbsp pine nuts
1tbsp olive oil
1. Put the pasta, chopped chicken and 3tbsp water into a large bowl and microwave on high for 3 mins.
2. Stir in the spinach, tomatoes and pine nuts, then microwave for a further 2 mins or until the spinach has wilted.
3. Season well with salt and freshly ground black pepper and drizzle with olive oil.
