Vegetable fajitas

Vegetable fajitas

Serves: 2-4
Takes: approx 17 mins

15ml (1tbsp) sunflower oil
1 red, 1 yellow, 1 green pepper, deseeded and sliced
1 carrot, peeled and cut into matchsticks
3 spring onions, thinly sliced
1 garlic clove, peeled and crushed
5-10ml (1-2tsp) Cajun seasoning
90ml (6tbsp) fresh tomato salsa
4 wheat flour tortillas, warmed
Sliced red onions, to garnish
Salad and soured cream, to serve

1. Heat the oil in a large frying pan. Add the peppers and carrots, and fry for 5-6 mins until softened. Add the spring onions, garlic and Cajun seasoning and cook, stirring continuously, for 1 min adding a little water if necessary to prevent the mixture sticking.
2. Spoon a little of the tomato salsa into the middle of each tortilla. Top with a quarter of the vegetables and then fold the tortilla over loosely. Garnish with red onions and serve with salad and soured cream.
