When cooking sausages on the barbecue, don't prick them as they should cook in their own juices. If the fat leaks out, this will cause the barbecue to flare which leads to spitting.

It's also a good idea to cook the sausages at least 15cm (6in) away from the charcoal to make sure the sausage cooks evenly and doesn't burn on the outside and stay raw in the middle.
