Crispy cheese and potato bake

This dish would go great on the side of any roast dinner, or if you love potatoes and veg, have it on it's own for a quick and easy meal.

Serves: 2
Preparation time: 10 minutes
Cooking time: 25 minutes

500g potatoes, eg Maris Piper peeled and diced
100g broccoli florets
100g cauliflower florets
1 small leek, sliced into 2cm pieces
35g packet mix for onion sauce
300ml milk
50g Cheddar cheese, grated
6 tbsp hot milk
Knob of butter
Salt and pepper
Large packet of cheese and onion crisps

1. Place the potatoes in a pan, cover with boiling water, add a little salt, cover and simmer for 20 mins or until tender. Drain.

2. Meanwhile, cook the vegetables in boiling, salted water for 5 mins or until tender. Drain well. Blend the sauce mix with the milk in a small saucepan and bring to the boil, stirring. Add the cheese and stir until melted. Stir the sauce into the vegetables.

3. Mash the potato with the hot milk, knob of butter and seasoning.

4. Place the vegetable mixture in a serving dish and top with the mashed potato. Sprinkle with the crisps and serve immediately.
