Spicy salmon steaks
Juicy salmon tastes fantastic with these subtle herbs and spices – just go for as much chilli powder as you dare!
4 x 190g salmon fillets
6tbsp mayonnaise
2tbsp capers, chopped
1tbsp lemon juice
For the marinade
2tbsp chopped fresh dill
2tbsp chopped fresh parsley
1tbsp paprika
Pinch of chilli powder
1/2 tsp garlic salt
1tsp soft brown sugar
1/2tbsp olive oil
Zest and juice 1/2 lemon
1. Place the salmon in a large non-metallic dish, combine the marinade ingredients and rub into the salmon flesh. Leave to marinate for 10 mins. Preheat the grill to high and cook the salmon for 10 mins, turning just once halfway through cooking.
2. Meanwhile, combine the mayonnaise, capers and lemon juice, and season with black pepper. Serve the salmon with hot couscous, flavoured with fresh herbs, some steamed green beans and a spoonful of the caper mayonnaise.
