Sauté peaches with lime, Madeira and allspice
A fruity pud that's divine served with ice cream!

3tbsp Madeira
I lime, juiced
1tsp ground allspice
115g muscovado sugar
55g unsalted butter
410g can peach halves
2tbsp mascarpone
1. Place 3tbsp Madeira, juice of 1 lime, 1tsp ground allspice and 115g light muscovado sugar in a small pan and heat gently until the sugar has dissolved, but do not allow to boil. Keep warm.
2. In a large frying pan, heat 55g unsalted butter until starting to brown. Drain a 410g can peach halves; place peaches cut-side down in pan, reduce heat slightly and sauté for 2 mins until golden.
3. Turn peaches and cook for a further 1-2 mins. Remove from the heat, pour in the Madeira mixture and swirl around gently. Add 1tbsp mascarpone and stir in. Divide peaches between 4 bowls and drizzle with the sauce and an extra spoonful of mascarpone.
