Corned beef and broccoli potato cakes
A nice quick and easy meal for hungry kids. Great with chips or try salad for a healthier option
Serves: 4
Takes: 15 - 16 mins plus chilling time
450g fresh mashed potato
50g (2oz) broccoli
3 spring onions
175g (6oz) diced corned beef
100g (4oz) white breadcrumbs
1. Place mashed potato in a bowl and mix with the lightly cooked and finely chopped broccoli, chopped spring onions and diced corned beef.
2. Season well with salt and freshly ground black pepper and shape into 8 small potato cakes.
3. Dust each with flour, then coat with breadcrumbs.
4. Chill for 30 mins, then fry in a little hot oil for 5-6 mins on each side until crisp and golden.
