Salad of smoked mackerel and potatoes
Serves: 2
200g mackerel fillet
150g Anya potatoes
1 head of rocket
1tbsp chopped chives
1tbsp creamed horseradish
6 cherry tomatoes
2tbsp olive oil
Juice of half a lemon
2tbsp crème fresh
1. Slice potatoes in half, toss in a little olive oil and cook for 3 minutes both sides in a chargrill pan.
2. Drain the potatoes on kitchen paper
3. Whisk horseradish with lemon juice and the 2tbsp of oil, and use it to dress the rocket leaves
4. Place the leaves in a bowl and flake the mackerel over the top
5. Slice the tomatoes and arrange a salad then sprinkle with the chives finish salad with a dollop of crème fresh, and serve.
