Cucumber and yogurt dip

This makes a great light lunch when served with wholemeal pitta breads and vegetable crudités. It's also a great dip for barbecues.

250g soya Organic Plain dairy free alternative to yogurt
1/2 cucumber, grated and gently squeezed to remove excess fluid
1-2 cloves garlic
Juice of 1/2 lemon

1. Mix all the ingredients together and season with lots of black pepper.
