Orange chilli jumbo prawns

These jumbo prawns make an ideal starter or cold first course as well as finger buffet food. If you cannot find large prawns, use the smaller ones, threading 3 or 4 onto the end of each cocktail stick.

Takes: 10 mins, plus marinating time of 2 - 3 hrs

16 jumbo prawns
Zest of 1 orange
1 red chilli, finely sliced
2tbsps freshly squeezed orange juice
1tbsp light soy sauce
1tbsp chopped fresh chives
150ml (1/4pt) tomato passata
2 garlic cloves, crushed

1. Peel the prawns, removing the shell and legs. Rinse well and place in the bottom of a shallow dish.
2. Combine the remaining ingredients and pour over the prawns. Leave to marinate in the refrigerator for 2-3 hours.
3. Pre-heat a non-stick griddle pan until hot. Place the prawns in the pan and cook for 2-3 mins on each side, basting with the marinade during cooking.
4. Once cooked, press a cocktail stick into each prawn and place on a serving dish.
