Chunky tuna and bean salad

2tbsp extra virgin olive oil
1tbsp lemon juice
2tbsp fresh parsley, chopped
2 x 290g (10oz) cans of borlotti beans, drained and rinsed
2 x 185g (6 1/2oz) cans of tuna chunks in spring water, drained
1 red onion, halved and thinly sliced
2 sticks celery, sliced
Mixed salad leaves, to serve
1. Put the olive oil, lemon juice and parsley in a bowl and whisk together. Season, add the borlotti beans and mix well.
2. Break the tuna into chunks and add to the beans, along with the onion and celery. Mix gently and serve immediately with the mixed salad leaves.
