Coronation chicken
Good ol' British favourite with a summer twist

Per serving:
Calories 350, Carbs 8g, Fat 25g, Saturated fat 7g
1 pack ready to eat half roast chicken or 2 cooked chicken breasts
100ml chilli mayonnaise
1 ripe mango, peeled and sliced
half a cucumber, cut into 1cm chunks
4 spring onions, trimmed and sliced
2tbsp flaked almonds, toasted
1. Discard the chicken skin and cut the meat into small pieces. Mix with the mayonnaise.
2. Stir in the mango, cucumber, spring onions and flaked almonds, then serve.
