Fairy cakes

These fairy cakes are party favourites and great to make with the kids.

Preparation: 15 mins plus cooling time
Cooking: 20 mins
Serves: 12

Calories per serving: 40
Fat per serving: 8g

100g (3 1/2oz) self-raising flour
1tsp baking powder
100g (3 1/2oz) soft margarine or butter, at room temperature
100g (3 1/2oz) caster sugar
2 large eggs, lightly beaten
1tbsp milk (optional)

1. Preheat oven to 180°C/355°F/gas 4. Take a 12-cup bun tin and put paper cases in the cups. Sift together the self-raising flour and baking powder.
2. Add the butter or margarine, sugar and eggs, and beat with an electric hand whisk for about 2 mins until well mixed. If the mixture is too stiff, add a little milk and mix again.
3. Divide the mixture evenly between the cake cases to about half full. Bake for 15 to 20 mins until risen and just firm.
4. Cool slightly, then remove to a wire rack to cool completely.
5. Ice and decorate the cakes - be as adventurous as you like!

for a lighter sponge omit 1 egg and add 3 small drops of vinigar this breaks down the fat and you cannot taste the vinigar when they are cooked try it and see my mother gave me the recipe when she was alive and like most people i went yuck vinigar but it worked so i always cook with it now.

I used this recipe to make mothers day cakes. I am 13 and found the recipe very easy and simple to follow and i used roll out icing to make petals to decorate them. But more importantly my mum loved them!!!!!
