Oozy, creamy, melted brie goes perfectly with slightly salty bacon, so make sure you make enough for seconds!
Makes: 4 pancakes
Ingredients:
8 rashers of back bacon
3 tomatoes
100g Somerset brie, sliced
Fresh chives, to serve
1. Preheat the oven to 200C/Fan 180C/Gas Mark 6.
2. Grill 8 rashers of back bacon until crisp - about 8 mins.
3. Halve then slice 3 tomatoes; slice 100g Somerset brie.
4. Place a pancake on a lightly oiled baking tray and scatter over a third of the bacon, brie and tomatoes, repeat the layers twice ending with a fourth pancake.
5. Bake for 15 mins or until the pancakes are crisp and the cheese melted.
6. Scatter over snipped fresh chives and serve.
Tip: If you like it spicy add a few sliced jalapeno chillies to the layers.
