Rosalind Lynch's diet
Rosalind Lynch's family food diary
Name: Rosalind Lynch
Age: 46
Lifestyle: Lives with son, daughter-in-law and their two children aged 5 and 3. Rosalind brings up the children and manages the food shopping and cooking.
Rosalind says: 'Breakfast is something quick as it's always a rush, so we usually have two crumpets or two rounds of wholemeal toast with margarine. If we have extra time we'll have porridge or cereal. The children have school dinners, not packed lunches, but the menu at the school is very good. We all eat the same meal as a family in the evening.
'I don't think our diet is particularly unhealthy, but it could include more fresh fruit and vegetables. I'd like to become a vegetarian but I don't like fish and lack ideas. I suffer with acute asthma and have been advised not to have large amounts of dairy products.
'We do buy some ready meals, but not many. They tend to be supermarket own-brand cottage pies, fish fingers and pizzas.'
Rosalind's typical daily meal
Breakfast: Two crumpets with margarine, 2 rashers of bacon with the fat cut off, and beans
Lunch: A wholemeal pitta bread with beef and horseradish sauce with a cup a soup and a handful of crisps.
Dinner: Chicken breast with onion, and stir fry sauce in a pitta bread with rice and salad
Occasional snacks: Crisps, fruit and small amount of milk chocolate.
