Michelle Marwood's sweet potato and tomato soup
4 large sweet potatoes
3 carrots
1 red pepper
2 onions
8 medium size tomatoes
Vegetable stock
1. Peel the sweet potatoes and carrots and cut into large cubes. Boil in vegtable stock untill they go soft.
2. While that's cooking, boil some water in another pan. Chop the red pepper and score the tops of the tomatoes. Place in the pan for about 5-10 mins until you can peel away the skin then leave to one side.
3. Fry the onions until soft. Drain the potatoes and carrots and mix all the ingredients together. Blend until you reach a smooth consistency then add salt and black pepper to taste.
