Raspberry Turkish Delight brulées
Juicy raspberries and Turkish Delight with low-fat natural yogurt and a sweet, crunchy topping.

350g (12oz) raspberries, thawed if frozen
300g (11oz) low-fat natural yogurt
50g (2oz) pink Turkish Delight
4tbsp Demerara sugar
4tsp natural essence of rosewater (optional)
1. Divide the raspberries between four large ramekin dishes and sprinkle 1tsp rosewater (optional) over each dish.
2. Pour the yogurt into a bowl, then cut the Turkish Delight into small pieces and mix into the yogurt. Spoon over the raspberries to cover.
3. Preheat the grill to a hot setting. Arrange the ramekins in the grill tray and sprinkle each with 1tbsp sugar and grill for 3-4 mins until the sugar melts and caramelises. Stand for 1 min to allow the sugar to set before serving.
Top tip: If you have more time, place the fruit in a shallow bowl and sprinkle over the rosewater. Cover and stand for 30 mins to allow the flavours to infuse. For a change, you can also use small halved strawberries or even cubes of orange-fleshed melon.
