Makes: A 20cm (8in) round Christmas cake
125-150g (4-5oz) white flower paste (edible modelling paste available from most good cake-decorating shops)
Cornflour, for dusting
20cm (8in) round date and walnut fruit Christmas cake
4-5 tbsp apricot glaze or sieved apricot jam
1kg (2lb) white marzipan
1kg (2lb) white sugarpaste, eg, Regalice
Edible lustre spray in Baby Blue
PME snowflake cutters
Cake drum or flat plate, about 25cm (10in) diameter
Decorative braid or ribbon
Double-sided sticky tape
The snowflakes are made using ready-made flower paste and the PME set of 3 snowflake cutters, available from most good cake-decorating equipment shops. They're also available from cake shops and HobbyCraft.
