6 large aubergines
Salt
10 tbsp olive oil
200g plain flour
4 eggs
2 x 250g Galbani Maxi Mozzarella
300g parmesan
Fresh basil
For the tomato sauce:
5 tbsp olive oil
1 onion
2 sticks of celery
1 carrot
4 x 400g tins of tomatoes

Really sorry, I voted this 1 star by mistake; can I somehow retract it? I actually made this last night and it was delicious. I was cooking for a mixed group of vegetarians/normals and it went down well with everybody. 5 stars
