Cod fillet with white wine & butter beans

Butter beans go really well with white fish. This tasty dish is easy to prepare and should impress your friends!

Cooking time: 30 mins
4 x 6-7oz cod steaks
400g can Napolina Butter Beans
1tbsp Napolina Olive Oil
1 onion, chopped
2 garlic cloves, sliced
1 celery stalk, chopped
2 bay leaves
3 fresh thyme sprigs
Glass of white wine
150ml vegetable stock
200ml double cream
Sea salt and black pepper for seasoning
Chopped fresh parsley to finish
1. In a deep-sided pan gently fry the onions, garlic and celery until soft in the olive oil.
2. Add the white wine, thyme and bay leaves and heat through until reduced by half.
3. Next add the vegetable stock and cream and bring to a simmer before adding the butter beans and fish. Continue cooking for 6-8 mins.
4. Season with salt and pepper, add the chopped parsley and serve.
