How to fillet a fish

Borough Market fishmonger Darren Brown shows us how to fillet both a round and flat fish.

Darren’s Top Tips for filleting fish

  • You need to have a sharp knife – blunt knifes tear the fillet.
  • Slice in at the next of the fish then slide the knife down the side.
  • Always push the knife away from you. 
  • Pull the fillet from the bones. 
  • Trim off any stomach area. 
  • You get two fillets from a round fish and either 2 or 4 from a flat fish.
