I made it for the family over half term and the children loved it, it was a great flavour and you could clearly tell what type of apples had been used. When I photographed it I used a little melon baller to get dainty little ice cream balls. For the family they had potato scooped sized portions and one batch only lasted for the about three lots of puddings. I will make it again though, as it was well received and I love using our fresh fruit and vegetables in recipes.’

My daughter was at school on her birthday and my little boy was poorly, so I couldn’t get out to get any specific ingredients for a cake – I am not a magnificent baker and so I rummaged around my cupboards and had the right things to make a load of fairy cakes – nobody can mess up fairy cakes! When I had made a few batches I left them to cool and made lots of pink glace icing. I piled the cakes in a big tower and just poured the icing all over the top, letting it all run down the tower, which stuck it together and made it stable. I then put hundreds and thousands all over it. I was quite proud of my ‘alternative birthday cake’ and my daughter squealed with happiness when she came home and saw it!’
