Chinese chicken stir-fry

You're relying on packets of convenience stuff here but they do make this recipe a doddle. It's a good basic recipe that you can swap about to suit your needs but pre-cook the chicken if you're cooking it from raw.

Takes: less than 10 mins
Serves: 4

250g (9oz) thick egg noodles
1tbsp sesame oil
350g (12oz) pack Chinese stir-fry vegetables
1tbsp olive oil
2 x 140g (5oz) packs Chinese-style cooked chicken, sliced
3tbsp oyster sauce
1tsp sesame seeds

1. Boil the noodles in salted water for 2-3 mins, drain and toss with the sesame oil.
2. In a hot wok, stir-fry the vegetables in the olive oil for 3 mins. Add the chicken and cook for a further 2-3 mins.
3. Add the oyster sauce, sesame seeds and noodles and stir together. Serve immediately.
