Beef with Cumberland sauce

Beef with Cumberland sauce

Cumberland sauce goes really well with sausages but we also like it with beef. Try out this recipe when your friends come over - they'll be impressed

Serves: 4
1tbsp olive oil
small knob of butter
4 beef fillets (approx 1in thick)
120g pancetta or thinnly sliced ham
10g mushrooms chopped into small pieces
1 small glass red wine (approx 100ml)
4dsp Cumberland Sauce

1. Heat the oil and butter in a heavy bottomed frying pan and fry the beef fillet for 2 mins each side ? they should be rare in the middle ? cook for longer if you prefer.
2. Transfer to a plate.
3. Fry the pancetta or ham and mushrooms in the juices in the pan for 5 mins until slightly golden.
4. Add the red wine, leave to bubble for a min, then add the Cumberland sauce and heat through for a couple of minutes.
Serve the beef fillet with a little sauce drizzled over the top, eat with creamy mash and steamed green vegetables or salad.
