An American classic with a twist! Chunky Brazil nuts make these melt-in-the-mouth brownies extra-irresistible

Ingredients

Make up to stage 5, then wrap in a freezer bag and freeze for up to one month. Defrost and dust with icing sugar before serving.

  • 200g (7oz) plain chocolate
  • 250g (8oz) butter, softened
  • Few drops of vanilla extract
  • 4 medium eggs
  • 300g (10oz) caster sugar
  • 125g (4oz) plain flour
  • 175g (6oz) Brazil nuts, roughly chopped
  • Icing sugar, for dusting

Method

  1. Melt the chocolate in a bowl, in the microwave or over a pan of hot water.
  2. Beat together the melted chocolate, butter and vanilla extract.
  3. Lightly beat together the eggs and sugar until the mixture is slightly foamy but not too thick.
  4. Fold the egg mixture into the chocolate mixture, then fold in the sifted flour. Finally, fold in the chopped nuts.
  5. Spoon the mixture into a 26 x 16.5cm (10¼in x 6½ in) oblong tin, lined with baking parchment, and level the surface. Bake in the centre of the oven at 190°C (375°F, gas mark 5) for 30-35 mins, until just set to the touch in the centre. Remove from the oven and leave to cool in the tin for 5-10 mins, then transfer to a wire rack to cool completely.
  6. Dust with icing sugar. Cut into squares to serve.
