Goat's Cheese Pizza Tarts

Tangy goat's cheese and juicy cherry tomatoes make these super-tasty tarts into a scrumptious summer lunch or party dish

Ingredients

To ensure the pastry rolls properly, keep it as cold as possible and only roll in one direction.

  • 425g (15oz) ready-rolled puff pastry
  • 240g (½ oz) red onion jam
  • 200g (7oz) soft mild goat's cheese
  • 24 cherry tomatoes, quartered
  • Handful fresh thyme leaves
  • 100g (3½ oz) rocket leaves

Method

  1. Unroll the puff pastry and cut into eight squares. Put a layer of baking paper on a baking tray and place the pastry squares on top. Bake in the oven at 190°C (375°F, gas mark 5) for 8-10 mins.
  2. Remove from the oven and spread each square with 1tbsp onion jam, leaving a shallow border round the edge. Crumble the goat's cheese on top and add 3 quartered cherry tomatoes to each piece. Sprinkle with thyme leaves and lots of freshly ground black pepper.
  3. Return to the oven and bake for 10 mins or until the pizza dough is golden and the cheese is beginning to brown.
  4. Serve two slices per person, warm or cold, with the rocket leaves.
