Ingredients

  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 celery stalks, finely chopped
  • 1 carrot, finely chopped
  • 2 x 400g (14oz) tins chopped tomatoes
  • 2tbsp tomato purée
  • 300ml (½ pint) hot beef stock
  • 500g (1lb 2oz) lean beef mince
  • 60g (2¼ oz) low-fat spread
  • 60g (2¼ oz) plain flour
  • 700ml (1¼ pint) semi-skimmed milk
  • ½ tsp grated nutmeg
  • 250g (9oz) lasagne sheets (fresh lasagne from the chiller cabinet are best)

Method

  1. Place the onion, garlic, celery and carrot in a pan with the tomatoes, tomato purée and hot beef stock. Season well, cover and cook over a medium heat for 10 mins.
  2. Dry-fry the mince in a pan until brown, drain off any excess fat and add to the tomato mixture.
  3. Melt the low-fat spread in a pan, add the flour and cook for a couple of mins, then gradually add the milk until you have a thick sauce. Season with the nutmeg and set aside.
  4. In an oven-proof dish, layer the meat sauce with the lasagne sheets and white sauce, finishing with a layer of white sauce. Cook in the oven at 180°C (350°F, gas mark 4) for 20-30 mins, covering with foil if it gets too brown.

    made this lasagna yesterday..i dont cook much am trying to learn and spent about 2 hours getting it done..think my amounts were slightly off and my white sauce just wouldnt thicken,but it actually was quite nice,and will definately be trying it again!

    I just made this lasagne today for my family, I got good comms all round like "best homemade lasagne I've ever tasted" and as for me, I think their statements were quite true, Ive freezed my leftovers and I'm sure I'll be making this again in the near future ... it was YUM! ... just a tip tho, BUY MORE LASAGNE SHEETS INCASE YOU COME UP SHORT ... like i did :-D
