Brocolli and cauliflower really complement the smooth white sauce in this deliciously filling dish

Ingredients

  • 200g (7oz) cauliflower
  • 25g (1oz) butter
  • 25g (1oz) flour
  • 300ml (½ pint) milk
  • 75g (3oz) breadcrumbs
  • 50g (2oz) Cheddar, grated
  • Salt and pepper
  • Pinch of grated nutmeg

Method

  1. Parboil the broccoli and cauliflower.
  2. To make the white sauce, melt the butter, stir in the flour and add the milk. Season with salt, pepper and nutmeg.
  3. Mix the vegetables with the sauce, top with the breadcrumbs and cheese. Bake at 180°C (350°F, gas mark 4) for 20 mins.
