Split Pea and Ham Soup

This heartwarming soup is a great way to use up any leftover ham. It's ideal as a quick lunch during the week or tasty starter for dinner parties

Ingredients

This soup is gorgeous when served with a swirl of cream or some melting mozzarella.

  • 25g (1oz) butter
  • 225g (8oz) leeks, sliced
  • 2 garlic cloves, crushed
  • 75g (3oz) dried split yellow peas
  • 1 litre (1¾ pint) hot vegetable stock
  • 2tbsp fresh thyme leaves
  • 225g (8oz) cooked ham, diced

Method

  1. Heat the butter in a pan. Add the leeks and garlic, and fry for 5 mins.
  2. Stir in the split peas and hot vegetable stock. Bring to the boil and simmer for 40 to 50 mins.
  3. Add the thyme and ham. Season, simmer for 5 mins and serve.
