If you like your food spicy, then Anna Henley's adaptation to this classic salad dish will really appeal.
Ingredients
Add chicken to this recipe for a heartier meal.
- 2 hard-boiled eggs, finely chopped
- 2tbsp Dijon mustard
- 2 cloves garlic, chopped (or 1/2 chopped red onion)
- 2tbsp lemon juice
- 1tbsp red wine vinegar
- 5 drops Worcestershire sauce
- 3 drops Tabasco sauce (optional)
- 2tbsp olive oil
- 1 large head romaine lettuce, torn into pieces
- 1 cup croutons
- 3tbsp grated Parmesan cheese
Method
- In a large salad bowl, blend the eggs, mustard, garlic and lemon juice together to make a paste.
- Add the vinegar, Worcestershire sauce and Tabasco (optional), then slowly blend in the oil.
- Add the remaining ingredients apart from the Parmesan. Toss to coat thoroughly.
- Sprinkle the Parmesan over the salad and serve with crusty bread.
