Anna Henley's Caesar salad

If you like your food spicy, then Anna Henley's adaptation to this classic salad dish will really appeal.

Ingredients

Add chicken to this recipe for a heartier meal.

  • 2 hard-boiled eggs, finely chopped
  • 2tbsp Dijon mustard
  • 2 cloves garlic, chopped (or 1/2 chopped red onion)
  • 2tbsp lemon juice
  • 1tbsp red wine vinegar
  • 5 drops Worcestershire sauce
  • 3 drops Tabasco sauce (optional)
  • 2tbsp olive oil
  • 1 large head romaine lettuce, torn into pieces
  • 1 cup croutons
  • 3tbsp grated Parmesan cheese

Method

  1. In a large salad bowl, blend the eggs, mustard, garlic and lemon juice together to make a paste.
  2. Add the vinegar, Worcestershire sauce and Tabasco (optional), then slowly blend in the oil.
  3. Add the remaining ingredients apart from the Parmesan. Toss to coat thoroughly.
  4. Sprinkle the Parmesan over the salad and serve with crusty bread.
