Try these potato pancakes with a Sunday morning fry up, or as a quick afternoon snack- the kids are bound to love them too.

Ingredients

  • 4 potatoes, peeled and grated
  • 2 cups grated cheese
  • Handful of finely chopped chives
  • 1tbsp olive or vegetable oil
  • Salt and pepper
  • Crème fraiche, ketchup or hot sauce (optional)

Method

  1. Bring a pan of water to the boil and add the grated potato. Cook for 1 min only. Drain and run under cold water. Pat dry with a clean towel.
  2. Mix the potato, cheese and chives together in large bowl.
  3. Heat the oil in frying pan. Take a handful of the potato mix and flatten into a rough pancake shape. Fry for 5 mins on each side.
  4. Serve the potato pancakes with crème fraîche or ketchup. They're delicious with bacon, too.
