Olives, feta and red pepper are just a few of the key ingredients that make up this tasty dish.

Ingredients

  • Pasta shapes, about 50g (2oz) per person
  • 4 tomatoes, chopped
  • 1 red pepper, deseeded and chopped
  • 1/2 cucumber, chopped
  • 1tbsp olive oil
  • 1/2 block feta cheese, crumbled
  • 1/2 jar black olives (without stones)
  • Green beans to garnish
  • Black pepper, to taste

Method

  1. Cook the pasta in boiling water according to packet instructions.
  2. Meanwhile, mix together the tomatoes, pepper and cucumber.
  3. Drain the cooked pasta and return to the pan. Drizzle with olive oil.
  4. Sprinkle the feta on top. It should start to melt slightly.
  5. Add the chopped salad and olives. Mix gently and serve with green beans and garlic bread.
