Mackerel's often a winner with kids and a great way to bump up their omega 3 intake. Cooked in this tasty pasta dish, it's not surprising it's Denise Taylor's favourite recipe.

Ingredients

  • Fusilli pasta, about 50g (2oz) per person
  • 1 apple, chopped
  • 3 to 4 spring onions, chopped
  • Handful of cherry tomatoes
  • 1 avocado, skinned and chopped
  • 1 x can smoked mackerel, chopped
  • 1tbsp plain yogurt
  • 1tbsp mayonnaise
  • Fresh or dried dill

Method

  1. Cook the pasta according to packet instructions. Meanwhile, mix together the apple, tomato, spring onions, avocado and mackerel.
  2. Blend together the yogurt and mayonnaise. Stir into the apple and mackerel mixture and season with dill.
  3. Drain the cooked pasta and stir into the mackerel mixture. Season with salt and pepper if necessary. Serve with mixed salad.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.

    We had Denise Taylor's Pasta in a pinch and it was very enjoyable. Each week since I discovered this website I have tried one or two of the recipes posted here and most of them are very enjoyable. One tip that I suggest. If you like to add salt to your cooking, try lo-salt. It tastes the same as ordinary salt but does not cause the problems that they say ordinary salt does. My own family have been using it for some years.
