Strong cheese mixed with mustard and ale makes the most satisfying topping for toast in this traditional lunch or teatime treat for the kids.

Ingredients

Serve up with a crisp green salad with vinaigrette and the rest of the ale.

  • 1 leek, sliced
  • 40g (½ oz) butter
  • 225g (8oz) mature cheddar, grated
  • 1tsp wholegrain mustard
  • 4tbsp bitter, eg. John Smith's
  • 8 thick slices fresh white crusty bread

Method

  1. Preheat the grill to high. Put the leeks and 20g (¾ oz) butter in a saucepan and cook until the leeks are tender. Add the cheese, remaining butter, mustard and bitter, and heat gently, stirring occasionally, until the cheese is melted and the mixture is smooth and creamy. Season to taste.
  2. Lightly toast the bread under the grill on both sides. Top with the leek and cheese mixture, then grill until golden and bubbling.
