Roast parsnips with parmaesan

Parsnips are cheap, easy to prepare and packed full of goodness. Here's a simple way to add a new twist to an old favourite

  • Cooking time: 25 mins

Ingredients

Mix things up by throwing in a few baby carrots with the parsnips, too.

  • 500g (1lb 2oz) parsnips, quartered lengthways
  • 2-3 cloves of garlic, thinly sliced
  • 25g (1oz) parmesan, grated
  • 75ml (3fl oz) vegetable oil

Method

  1. Preheat the oven to 200°C (400°F, gas mark 6).
  2. Heat the vegetable oil until it's smoking and then add the parsnips and garlic. Carry on cooking for 20-25 minutes.
  3. Sprinkle over the grated Parmesan, then place back in the oven until the cheese has melted.
