Fruity couscous helps give a genuine Moroccan flavour to this super-satisfying lamb dish. Tuck in!

Ingredients

To make this dish extra-spicy, add a pinch of turmeric, oregano, paprika and cumin to the couscous.

  • 450g (1lb) lamb steaks, cut into chunks
  • 200g (7oz) couscous
  • 25g sliced olives
  • 1tbsp olive oil
  • 1 orange, peeled and sliced into segments
  • 1 handful chopped coriander

Method

  1. Heat the oil in a large pan and add the lamb, then cook for 10 mins until golden. Stir in couscous, orange and olives and pour over 400ml boiling water.
  2. Season, cover the pan and cook for 5 mins more.
  3. Sprinkle over chopped coriander, flake the couscous with a fork, then serve at once.
