Ingredients
To make this dish extra-spicy, add a pinch of turmeric, oregano, paprika and cumin to the couscous.
- 450g (1lb) lamb steaks, cut into chunks
- 200g (7oz) couscous
- 25g sliced olives
- 1tbsp olive oil
- 1 orange, peeled and sliced into segments
- 1 handful chopped coriander
Method
- Heat the oil in a large pan and add the lamb, then cook for 10 mins until golden. Stir in couscous, orange and olives and pour over 400ml boiling water.
- Season, cover the pan and cook for 5 mins more.
- Sprinkle over chopped coriander, flake the couscous with a fork, then serve at once.
