Cottage Pie with Hash Browns

Made with beef mince rather than the lamb used in shepherd's pie, cottage pie is a comforting dish that's perfect for hearty lunches or dinners

Ingredients

Use a very hot heavy-based frying pan (not a saucepan) to dry-fry your mince. If it's not hot enough, the mince will stew and become grey and unappetising.

  • 500g (18oz) beef mince
  • 1 onion, sliced
  • 2tbsp tomato purée
  • 3tbsp ketchup
  • 1tbsp Worcestershire sauce
  • 100ml (3½ fl oz) rich beef stock
  • 410g tin flageolet beans
  • 10 frozen hash browns

Method

  1. Preheat the oven to 200°C, 400°F, gas 6. Dry-fry the mince until browned then drain and set aside.
  2. Add a little oil to the pan and cook the onion until soft. Add the mince back to the pan along with the tomato purée, ketchup, Worcestershire sauce, stock and beans. Mix well, season with salt and black pepper and cook until heated through.
  3. Transfer to an ovenproof baking dish and arrange the hash browns on top.
  4. Bake in the oven for 30 mins or until the hash browns are golden and cooked through. Serve with peas or broccoli.
